Svolge la propria vinificazione con una pressatura soffice ed il mosto viene affinato in botte effettuando la fermentazione malolattica. La seconda fermentazione in bottiglia avviene in uno dei 3 livelli di cantine che la famiglia ha ricavato nel gesso. In etichetta non viene indicata nessuna vendemmia o data di degorgement ma  la maggior parte degli Champagne della famiglia sono un blend di due annate. I vini di Fallet vengono conservati diversi anni oltre quanto richiesto ed il vino mostra il carattere di uno champagne invecchiato alla perfezione. Fallet-Crouzet Non Dosé al naso è profondo e si apre lentamente su frutti maturi bianchi e gialli (pera, albicocca e mango) con anche sentori di gesso e spezie sul fondo. Grande eleganza al palato con attacco sottile e poco\u003cbr\u003eossidativo e frutta matura.
